In this article:

A soluble β-D-fructofuranosidase fructohydrolase from grape berries has been isolated and substantially purified.

The data of this paper, taken together with pertinent results of the other two papers in this series, lead to the following description of β-fructofuranosidase in grape berries.

About 6o% of the total enzyme is readily extractable by neutral aqueous buffers. Of the remaining 4o% , approximately half is bound to an insoluble carrier in such a way as to be freely accessible to sucrose and in essence to behave exactly as if it were in solution.

The latent half of the bound enzyme fraction is released by borate treatment.
