This paper reports the behaviour a number of Sultana clones in relation to the drying process. Some knowledge of the variation available was needed to assess whether processing characteristics and market quality should be taken into account as well as yield in work on clonal selection.
This preliminary survey indicates that there is potentially useful variation in drying behaviour of Sultana clones. The differences found would warrant a more extensive survey to detect those more subtle variations that may have practical value to the dried fruits industry.
